Blending creates a well-balanced and highly refined taste. This is because each variety complements the shortcomings of the others. Furthermore, blending results in an oil that is resistant to heat, meaning its flavor does not easily diminish even when used for frying. All olives just before harvest are inspected by IAS (International Quality Certification Organization) for each plot. In pesticide residue tests, all pesticide residues have recorded below the minimum value of 0.01mg (0.01ppm).
