A larger quantity of fruits and a smaller amount of cane sugar are cooked in a large cauldron, with artisans carefully determining the cooking time for each batch.
The jam produced in this way is bottled while still hot, then cooled gradually to preserve the flavor and color of the fruits.
Confit de Provence jams are made by hand, not relying solely on machinery, to express the traditional Provençal method of cooking in copper pots.
