この白みりんは、江戸時代後期から現在に至るまで、地元有機栽培のもち米を蒸し手作業で麹米と混ぜ、米焼酎をベースに５０日間仕込みます。こだわりの製法で味を守り続けているみりんなのです。
昔のみりん独特の深みのある甘さを出すため、タンクを炭火で保温し続けます。
