This is an assortment of "Azuki" and "Kuri Azuki" Kyo-no-Mikasa, which have been long-time favorites in Kyoto.
Mikasa is made from a very simple batter of fresh eggs, sugar, and flour mixed with honey and other ingredients; it is generally known as "Dorayaki." The difference in name stems from the fact that in the Kanto region, it was called "Dorayaki" because it resembled the shape of a gong (dora), while in the Kansai region, it has been called "Mikasa" because it resembles Mount Mikasa in Nara.
Kyo-no-Mikasa "Azuki" contains no added fats or oils. The process begins every morning by hand-cracking fresh, 2L-sized eggs as they arrive. Our skilled artisans pour their hearts into the production, paying close attention to details such as the temperature of the water used to mix the batter according to the season.
