【Process of Making Orto Sannita】
It is produced by the Giovanna family in Benevento, southern Italy.
All olives are hand-harvested by hand within one week to ten days before ripening fully. The harvested fruit is transported to the oil mill within no more than 10 hours and pressed.
The pressing is done without any heat, crushing the fruit and then separating water, oil, and residue using a centrifuge.
Unlike typical oils that are filtered immediately after pressing, this oil is left unfiltered and naturally separated over three months before being processed into the final product.
Therefore, the flavor, umami, and nutrients of 100% olive fruit are preserved intact.
Since raw olives are crushed and pressed directly, safety is important. The olives used are organically cultivated in ideal soil and grown without pesticides.
After a rigorous three-year certification process by Italy’s organic certification organization Bioagricoop, the product was certified in 1996. The latest code number for this year is printed on the label.
