This is a sugarcane vinegar made using only the juice of sugarcane from Amami Oshima, produced using traditional natural fermentation methods. The original vinegar is aged in a kiln for about 2 years, giving it a deep flavor. The "Kibi-su" (sugarcane vinegar) passed down on Kakeroma Island, Amami Oshima, is a naturally fermented vinegar made by the natural fermentation of yeast and acetic acid bacteria unique to this region. "Kibi-su" is a vinegar with a high mineral content compared to any other vinegar, and it is also well-balanced, characterized by a very low sodium content. It also contains polyphenols, found in red wine and other substances, which are said to be effective in removing active oxygen. "Kakeroma Kibi-su 700ml" is a vinegar meticulously handmade using only high-quality sugarcane from Amami, using a traditional aging method. It is naturally fermented by yeast unique to this region and then carefully brewed and aged for 3 years, containing high levels of various components among different vinegars. Kibi-su boasts a 400-year history, but due to its extremely low production volume, relying on natural blessings for its brewing method, it was a vinegar that was rarely available for a long time. However, it has gradually become known through word of mouth. Vinegar is not only an important seasoning but also greatly contributes to maintaining health. This product is rich in essential components for the body such as calcium, potassium, and iron, which are often lacking in Japanese diets, and is characterized by an extremely low sodium (salt) content.
