収穫した葡萄を直火で一昼夜煮た後、バルサミコ酢専用の一連の木製小樽に詰めます。その後、毎年1回【リンカルツォ】という樽替え作業を行います。木製小樽は材質が異なっており、長期間の熟成を経て複雑な香りと甘酸っぱさを兼ね備えたバルサミコ酢となります。
芳醇な香りが飛んでしまうため加熱調理はお勧めしません。
本商品は以下の3種類の木箱入りDOP 各1本のセットです。
・エキストラベッキオ：100mL、25年以上熟成
・アッティリオ：100mL、20年熟成
・アッフィナート：100mL、12年熟成

アチェタイア・セレニはバルサミコ酢がヨーロッパDOP（原産地呼称保護）に加入するのを待って2000年4月17日DOPを取得しました。記念すべきモデナ産バルサミコ酢DOPの0001番ボトルはアチェタイアセレニの”アッフィナート”で、弊醸造所ミュージアムに保存されています。
