収穫した葡萄を直火で一昼夜煮た後、バルサミコ酢専用の一連の木製小樽に詰めます。その後、毎年1回【リンカルツォ】という樽替え作業を行います。木製小樽は材質が異なっており、長期間の熟成を経て葡萄の煮汁そのものが複雑な香りと甘酸っぱさを兼ね備えたバルサミコ酢となります。
芳醇な香りが飛んでしまうので加熱調理はお勧めしません。

・金印：100mL、25年熟成（DOPエキストラベッキオに匹敵）
・銀印：100mL、13年熟成（DOPアッフィナートに匹敵）
・赤印：100mL、10年熟成
