【商品説明】千鳥酢は、厳選された米を原料に長時間をかけて醸した米酢。
厳選された米を原料に長い年月、醸造蔵に慣れ親しんだ生産菌と醸造に適した水、そして独特の技術があいまって刺激の少ないまろやかな香りと風味を持った米酢です。京酢「加茂千鳥」は料理の素材の色や味、旨味をより引き立てます。「村山醸造(株)商標「千鳥酢」は江戸期に加茂川に群れ飛ぶ千鳥を詠んだ古歌「加茂川や清き流れに千鳥すむ」にちなみ命名されました。
千鳥酢はまろやかで単に酸っぱいだけではなく、深みのある味わいのお酢になります。千鳥酢は京料理に適した酢で、京料理の素材の持ち味・色をいかします。その為、調味料としては味があまり表にでない方がよく、千鳥酢は味がまろやかで酸味が 比較的やわらかいのが特徴です。この酢の美味しさは全国の人が知るところで、京料理は千鳥酢なしには語れません。
料理にはなくてはならない調味料として、有名料亭・お寿司屋さんなどで愛用されています。
