〇 How to boil soba:Use a large pot with plenty of boiling water.Be careful to boil the soba in a large pot with plenty of boiling water.The starch in soba can dissolve quickly if not heated properly.
The water temperature drops slightly when the noodles are added, so ensure the water is boiling vigorously enough to produce a rolling boil.The higher the buckwheat content, the more starch is needed (to form a glue-like consistency), so lukewarm water can cause the noodles to break.
