A long-loved signature product. The black maitake mushrooms cooked into Kuro Mai-kon are seasoned with a sweet flavor specifically developed to complement kombu, as only Mai-kon can. The black maitake mushrooms, cultivated in our own facilities, have little bitterness, and the small shiitake mushrooms add an accent to the chewy texture of Mai-kon.
What is "Mai-kon," the salt kombu so delicious it makes you dance: Our signature product, "Mai-kon," uses premium kombu harvested near the volcanic bay in Hakodate, Hokkaido, where hot springs emerge. This kombu is thick, rich in umami, and ideal for tsukudani (simmered kombu). By luxuriously using only the thickest part of the kombu, typically used for dashi, we achieve a refined flavor. At first glance, it appears to be ordinary "salt kombu," but it actually incorporates our unique "fermentation and aging" method. Fruits such as pineapple and apple are added to the kombu and left to ferment in large barrels. The secret to its mellow taste and rich umami lies in the fermented seasoning sauce, which draws out the fruit's flavor through fermentation.
