Product Introduction
A flavorful broth made with plenty of Koryo-go Maru Daizu Soy Sauce, mirin, and bonito dashi. Dilute 3-4 times with water for use as a broth for udon and soba noodles. No chemical seasonings used.
Our brewery was founded in 1923 in its current location (Sakado City, Saitama Prefecture). Prior to that, the first owner, Sasae Yugehta, who was engaged in agriculture, became interested in brewing and intended to start a soy sauce and miso brewery. By chance, he was able to bring in the entire brewery equipment and master brewer from a soy sauce brewery that was located in Iruma City, Saitama Prefecture at the time, and thus founded the brewery. Including the history from that time, we have over 200 years of history.
The current fourth-generation owner, Yoichi Yugehta, upholds the family motto from the first generation:
"Put a haori jacket on your business," and his own belief:
"Soy sauce is a food, so it must be safe to consume. Soy sauce is a seasoning, so it is meaningless if it is not delicious."
He continues to make soy sauce, the taste of Japan.

Features of Yugehta Soy Sauce
* Made with domestic whole soybeans, domestic wheat, and sun-dried sea salt.
(We only produce soy sauce using domestic ingredients, but nationwide, this accounts for only 0.2% of all soy sauce production.)
* Naturally brewed in cedar wood vats. Aged for one year.
(We also have tanks. Depending on the season of brewing and the type of soy sauce, we also use tank brewing.)
(Organic soy sauce, wood vat-brewed soy sauce, and Ginjyo Junnamashoyu are fermented and aged in wood vats.)
* We produce "namashoyu" (raw soy sauce) with live yeast and lactic acid bacteria, without heat sterilization or microfiltration.
(This type of soy sauce requires refrigeration and is very rare nationwide.)
(Ginjyo Junnamashoyu, Kasanejikomi Namaage Shoyu, and Shiboritate Namashoyu from the second floor of Sho-yu Oukoku fall into this category.)
