How to Make Homemade Koji
Ingredients:
- Rice or barley
Preparation:
- Soak the rice or barley in water, then drain and steam thoroughly.
Inoculation:
- After cooling to about 40°C, sprinkle "seed koji" over the steamed grains, mix well, and once the temperature reaches 32-33°C, wrap with a cloth or blanket.
Maintenance 1:
- After inoculation for 15-20 hours, if the temperature rises to 37-40°C, mix well and rewrap as before.
Maintenance 2:
- When the temperature reaches 37-39°C, mix well and rewrap.
Maintenance 3:
- When the temperature reaches 38-40°C, mix well and spread out the grains.
Koji Maturity:
- Excellent koji is produced within 42-48 hours from inoculation.
