Features:
- Made from organically cultivated domestic rice, this organic pure rice vinegar is carefully crafted through traditional brewing processes, taking ample time from fermentation to acetic acid production (acidity 4.5%).
- It is produced using traditional cold brewing and three-stage fermentation methods, with the finished sake stored in the brewery's own vinegar bacteria and naturally fermented via traditional static fermentation over approximately six months.
- Enjoy the umami characteristic of rice vinegar, along with a mellow, crisp flavor and a bright aroma. (It has almost no sour smell typical of steamed rice vinegar.)
- The brewing water is drawn from underground natural water in Ono, Fukui Prefecture, known as Echizen's small Kyoto and selected as one of Japan's Top 100 Water Sources. It is further refined using a filter from General Ecology, manufacturer of the Seagull For Water Purifier.
