Sea Spirit Yaki Shio Dining Bottle: A Fine, Light, and Flavorful Salt
Traditional Salt-Baking Method for Classic Roasted Salt
Made from 100% seawater from Izu Oshima, "Umi no Sei Arashio" is a traditional Japanese sea salt produced using sun-drying and open-pan methods. The product is then baked at high temperatures.
It is very difficult to turn traditional sea salt (Arashio), which contains a high amount of nigari components, into a dry, bakeable salt just by stir-frying in an earthenware pot.
Inspired by the ancient, traditional jar-baking method passed down at the Misoshiodono Shrine of Ise Jingu, we have developed a delicious yet light and smooth traditional baked salt.
Because it is baked at temperatures exceeding 600°C, the bitter components caused by magnesium chloride (a cause of moisture) are broken down.
As a result, the bitterness is reduced, and it has a milder, lighter flavor compared to Arashio.
However, the amount of magnesium, an essential nutrient element, remains unchanged.
This salt is convenient for use as table salt with raw vegetables, boiled eggs, fried eggs, tempura, sashimi, and more, offering a rich flavor.
It can also be used in cooking methods such as stir-frying, grilled fish, and steak, especially as a sprinkle salt during seasoning.
◆ Different from Other Regions: Origin, Raw Materials, and Manufacturing Method
On the remote island of Izu Oshima, where the Kuroshio Current hits, pure seawater is collected and processed using Japan’s traditional saltfield methods involving the sun, wind, and fire to produce "Umi no Sei Arashio." This is then processed with the traditional jar-baking method to produce "Umi no Sei Yaki Shio," which is light and easy to sprinkle.
◆ Traditional Jar-Baking Method Passed Down at Ise Jingu!
Traditional sea salt with high nigari content tends to be moist and difficult to turn into a dry, sprinkleable salt. "Umi no Sei Yaki Shio" is baked at high temperature based on the ancient method of the Misoshiodono Shrine, ensuring it remains dry and resistant to moisture.
◆ Lighter and Milder Than Arashio!
Baked at over 600°C, the bitter components such as magnesium chloride are broken down, resulting in a milder, less bitter, and more delicate flavor compared to Arashio.
◆ Same Composition, Different Texture!
Because it is baked at over 600°C, the nigari components (magnesium chloride) responsible for moisture are decomposed. Nonetheless, the amount of magnesium, an important nutritional element, remains unchanged.
