How to drink deliciously:1. Sift the matcha using a matcha sieve to prevent clumping.2. Pour hot water into the tea bowl and warm it. Swirl the whisk in the warm water, then discard the water.3. Wipe the inside of the tea bowl with a cloth. Take 1.5 to 2 heaped tea scoops (approx. 2g) of matcha and put it into the tea bowl.4. Pour about 70-80cc of hot water at around 80°C.5. While supporting the tea bowl with one hand, whisk the matcha with the whisk in a "m" shape.6. Once the matcha is well mixed without clumps and a fine foam has formed, gently lift the whisk from the center.

Let's delve into the history of why this town is considered the birthplace of green tea.In the 18th century, around the time of the Industrial Revolution in Britain, a tea farmer named Soen Nagatani produced the first bright-colored green tea in Japan. While bright-colored Japanese green tea is common today, people previously drank a dark red, coarse tea made only by roasting the leaves. Soen considered the possibility of tea that was "as bright as fresh tea leaves." He re-examined the conventional methods of green tea production and, after 15 years of experimentation, established a "green tea production method." This method involved gently kneading the tea leaves by hand and using heat to extract water, resulting in flavorful, bright green tea. Soen then shared his method with the local community, and Ujitawara town became the origin of Japanese green tea.
