Iio Brewing Fuji Genmai Black Vinegar is a black vinegar made from brown rice that was cultivated without the use of pesticides.
The raw materials are only brown rice grown without pesticides during the cultivation period in the mountain villages of Tango, Kyoto, and high-quality water. After traditional "static fermentation," it is slowly "long-term aged" to produce this brown rice black vinegar.
It contains 1,000 mg of natural amino acids per 100 ml, which are essential for the human body, and also includes a well-balanced amount of essential amino acids that the body cannot produce on its own.

- Dilute with water at least 8 times before drinking. Adding honey or similar ingredients makes it easier to drink.- It is also healthy to dilute with milk. ＜About Iio Brewing Fuji Vinegar＞
1. The rice used is only new, pesticide-free rice. For every liter of vinegar, 200 g of rice is used.
Good vinegar starts with good rice. Our philosophy is to produce rice without pesticides in the terraced rice fields of Miyazu, Kyoto, since 1964. Growing rice in remote terraced fields is to avoid the influence of pesticides and wastewater from other rice paddies.
"Junmai Fuji Vinegar" is a pure rice vinegar made from only rice and water. It uses 200 g of rice per liter of vinegar, which is five times the amount specified by JAS standards. "Fuji Vinegar Premium" uses even more rice—320 g per liter, eight times the JAS standard. Vinegar brewed with plenty of rice not only tastes sour but also has depth and umami.
2. Our in-house brewmaster also prepares "Vinegar Moromi" (sake mash) in our brewery.
Every winter, our brewmaster prepares vinegar moromi (sake mash). The process begins with koji making, followed by the preparation of the starter mash, and then the moromi (sake mash) fermentation, which takes about 100 days of continuous work. The finished moromi is rich in amino acids, which are key to developing the delicious flavor of the vinegar.
3. We produce vinegar using the traditional "static fermentation" method, which takes time and effort.
We ferment the moromi into vinegar using the "static fermentation method," where acetic acid bacteria naturally ferment on the surface of the tank. This process takes about 100 days, but it results in a mellow vinegar with rich amino acids, without losing its flavor.
Using delicious, pesticide-free rice and taking time with "static fermentation," the taste of "Fuji Vinegar" is sharply sour yet smooth, with a rich aroma, depth, and umami.
