2. **In-house Brewery:** Toji (master brewer) brews both the vinegar moromi (sake) and the vinegar itself.Every winter, our Toji brews the vinegar moromi (sake) in our brewery. Starting with koji making, then yeast starter, and finally moromi (sake) brewing, this is an intensive process that takes about 100 days of continuous work. The resulting vinegar moromi (sake) is rich in amino acids, which are key to the delicious flavor of the vinegar.
