Okinawa's Shima Māsu is a flat-pot salt carefully boiled down.
It is made by dissolving imported sun-dried salt from Mexico or Australia in Okinawa seawater, then slowly boiling it in a flat pot, taking time to produce.
It is well-absorbed as salt and can be used in all kinds of dishes such as pickles and grilled fish.
◆ Because it is boiled down over a wood fire, the radiation of far-infrared rays activates the salt, resulting in a mellow and rich flavor.
◆ The process involves dissolving imported sun-dried salt in Okinawa seawater, then carefully boiling it in a flat pot over time, and naturally dehydrating it for three days on a board.
◆ Besides the main component, sodium chloride, it contains calcium, magnesium, potassium, and other minerals.
◆ Suitable for use in pickles, umeboshi (pickled plums), miso, as well as grilled fish, simmered dishes, and all kinds of cooking.
<About the Blue Sea>
**The Beginning of the Blue Sea and the History of Shima Māsu**
Since ancient times, Okinawa, surrounded on all sides by the sea, has cherished the salt produced by salt-making artisans from its beautiful and abundant sea, called "Māsu." However, after Japan's reversion to sovereignty following World War II, the traditional method was prohibited due to regulations under the Salt Monopoly Law. This caused problems, as Okinawa's traditional food culture did not align with the imported salt.
In response, volunteers gathered to revive the traditional "Māsu," founding the "Blue Sea Co., Ltd." as the origin of this effort.
As can be seen from the company's history, our goal has been to live in harmony with the beautiful sea that Okinawa proudly boasts and to inherit the salt-making traditions cultivated over a long history. Initially, the revival of "Māsu" using only Okinawa seawater was not permitted, so we applied for manufacturing approval by purchasing and processing imported sun-dried salt. We were authorized as the Okinawa Salt Factory "Okinawa No. 1," and "Okinawa Salt Shima Māsu" was born.
Even today, we manufacture following the original method: dissolving sun-dried salt (from Mexico or Australia) in Okinawa seawater, then re-crystallizing it in a flat pot. Since our founding in Takahara, Okinawa City, and now with our main factory in Nishizaki, Itoman City, we have inherited traditional salt-making methods while overcoming modern challenges and background issues. By streamlining processes, we have achieved stable production and shipment. While maintaining the fundamentals of salt-making, we continue to evolve with the aim of providing "safe and secure products" consistently.
