◆ How to enjoy delicious soba:
All Yamamoto Kajino soba contains more than 50% buckwheat flour. For each product, follow the specific boiling instructions and times based on whether it is 100% or 50% buckwheat flour for best results. Please refer to these instructions.
Among them, 100% buckwheat soba requires a special boiling technique.
Please use these tips as a reference to enjoy delicious soba at home.
〇 How to boil soba:Use a large pot with plenty of boiling water.Be careful to boil the soba in a large pot with plenty of boiling water. The starch in soba can dissolve quickly if not heated properly.
The water temperature drops slightly when the noodles are added, so ensure the water is boiling vigorously enough to produce a rolling boil. The higher the buckwheat content, the more starch is needed (to form a sticky consistency), so lukewarm water can cause the noodles to break.
〇 How to rinse soba:Cool the noodles with cold water and gently knead to rinse.After boiling, transfer the noodles to a colander and rinse with cold water. Especially for noodles with a high percentage of buckwheat flour, they are most fragile immediately after boiling, so it is recommended to soak the colander in a bowl of water. Rinsing with water while not sufficiently cooling the noodles can cause them to break.
Once thoroughly cooled, gently knead with your hands to remove stickiness and rinse off the slimy surface.
