Shokin Soy Sauce is brewed in traditional wooden barrels. It is often said that "the microbes in the cellar create deliciousness," but we believe that "diversity management of the moromi (mash)" is key.
While soy sauces brewed in large outdoor tanks are suitable for stable, mass production, characterized by strong umami and high aroma, they can sometimes feel monotonous due to their industrial nature.
In contrast, brewing in cedar barrels, as with Shokin Soy Sauce, results in complex flavors. The barrels are open without a lid, and natural fermentation occurs at ambient temperatures, following seasonal temperature changes. Fermentation by main yeast begins around May when temperatures exceed 20°C, peaks at the end of June, and continues to develop in flavor, color, and aroma through August and September.
The shortest brewing period for usukuchi (light) soy sauce is about one year; for koikuchi (dark) soy sauce, 1 to 2.5 years; and for multiple re-peated brewed soy sauce, 2 to 3 years. During this time, the influence of the brewery and human management significantly affects the final product. Proper handling during fermentation, such as stirring to prevent separation and maintaining cleanliness of the barrels and brewery environment, is essential.
For example, stirring occurs about 20 times from April to July. During this period, the moromi continuously changes—separating, becoming more uniform, or drying on the surface. Unlike large outdoor tanks that maintain uniformity, cedar barrel brewing involves complex, evolving conditions, which I believe lead to a more complex and deep flavor profile. Management involves careful timing and technique in stirring, understanding how to achieve uniformity, and controlling separation, all to approach the desired soy sauce flavor.
