About Bancha:
Leaves that have grown and become tough are called "Bancha." The method of making Bancha varies by region, so there are green leaves made like sencha, and brown leaves made by roasting like hojicha.
There are several theories about the origin of Bancha:
1. The character "ban" (番) also means "everyday use," as in the words "ban-gasa" (umbrella) or "oban-zai" (Kyoto dialect for side dishes), so it is theorized to be called Bancha.
2. It is theorized to refer to tea picked between the first and second harvests.
3. It is theorized to have evolved from "ban-cha" (晩茶), meaning tea picked late.
With the development of tea processing technology, these came to refer to lower-grade sencha.
What is Kukicha?
Kukicha is tea made by extracting only the stems of new buds using a sorting machine during the finishing process of sencha. It is characterized by its unique refreshing aroma and sweetness. Among these, the stems of high-grade sencha are called "karigane" and are highly prized. The more lustrous and bright green the kukicha, the sweeter it is. Thick, reddish-brown stems are hard parts harvested by machine and are sold as "bocha" in some regions.
