Tempeh is a traditional, unsalted fermented food from Indonesia, made by fermenting cooked soybeans with tempeh starter. Each soybean is bound together by white mycelia (tempeh starter), earning it the nickname "soybean Camembert cheese." While the production method is similar to natto, which is made with Bacillus subtilis, tempeh lacks the stickiness and strong odor of natto, characterized instead by the mild flavor of the soybeans themselves. It blends well with any seasoning, making it versatile for various dishes such as grilling, frying, stir-frying, simmering, steaming, and in salads. It pairs exceptionally well with oil, and can be enjoyed with simple preparations like thinly slicing, lightly pan-frying both sides in oil, and seasoning with soy sauce.
