Only organically grown durum wheat is used, cultivated by the GiroloMoni Agricultural Cooperative, founded by Gino GiroloMoni, the father of organic farming in Italy, and by certified organic farmers within the cooperative.
A fully integrated production system, from cultivation to milling and pasta manufacturing, is carried out within the cooperative.
This pasta is slowly dried and finished to preserve the flavor, taste, and nutrients of the coarse-ground semolina from organically grown durum wheat as much as possible.
