It uses first-flush tea leaves, rich in aroma and umami components, and through roasting and extraction techniques that bring out their best qualities, it achieves a balance of "rich aroma and umami" and "mild astringency" as if freshly brewed. Freshly brewed green tea has a green liquor color, but over time, it oxidizes and turns brown. In 2020, Iyemon achieved a vibrant green liquor color, like that of freshly brewed tea, by using yeast-derived ingredients.
