しそには、紅紫色で縮緬（ちりめん）のある赤じそと緑色で縮緬が少ない青じその2つの品種があります。一般的にしそと呼ばれているのは、赤じそのことで、青じそは変種です。赤じそにはシソニンと呼ばれるアントシアニン色素が存在しており、酸と反応すると赤く発色する性質があります。この性質を利用して赤じそは梅干しや紅しょうが、シバ漬けなどの色付けに用いられています。
青じそは「大葉」とも呼ばれ、主に薬味として使われています。
