Bees fly from flower to flower collecting nectar from sunrise. At night, they diligently fan their wings to evaporate moisture, ripening the nectar to a concentration (sugar content of 80% or higher) sufficient to sustain life. Once ripened, they seal it with beeswax for storage. This process takes about 10 days.
Honey extracted after the bees have sealed the comb with wax is called "ripe honey" and is extremely rare today. Furthermore, the Tianshan region, where this honey is harvested, is at a high altitude with dry air. This naturally increases the nectar's sugar content, eliminating the need for heating to prevent fermentation, as if assisting the bees' work. As a result, a fragrant honey aroma fills the air when you open the bottle.
Most honey sold today is harvested before the bees seal the comb (ripening), and then heated rapidly to evaporate moisture and increase sugar content. While this is highly efficient, it alters the honey's original flavor, aroma, and nutrients, diminishing its natural taste and nutritional value.
