Shokin Tsuyu and Shokin Soy Sauce are authentic concentrated dashi made from "The Taste of Shodoshima," the hometown of soy sauce.

桶仕込み (wooden barrel fermentation), diversity, and a fermentation environment are essential for achieving a high level of refinement and sophisticated flavor.
Shokin Soy Sauce is brewed in wooden barrels. It is often said that "the microbes in the brewery create the deliciousness," but we believe that "management of the moromi (fermentation mash) emphasizing diversity" is the key.
While soy sauces brewed in large outdoor tanks are suitable for stable quality and mass production, characterized by strong umami and high aroma, they can sometimes feel monotonous due to their industrially calculated production.
In contrast, brewing in wooden barrels, as with Shokin Soy Sauce, results in a more complex flavor profile. The barrels are open without a lid, and the soy sauce is brewed at room temperature through natural fermentation, following temperature changes throughout the four seasons.
At Shokin Soy Sauce, whether brewed in November or March, the main fermentation by yeast begins when temperatures exceed 20°C, starting around May, with the peak until late June. Flavors start to harmonize in August, and from September onward, the color, aroma, and taste deepen.
The shortest brewing period for usukuchi (light) soy sauce is about one year, while for koikuchi (dark) soy sauce, it is 1 to 2.5 years. Re-fermented soy sauce takes 2 to 3 years. Because these are influenced by the brewery and human management over a long period, the handling during this time significantly affects the final product.
For example, microorganisms that degrade flavor often appear on exposed surfaces, and during the first summer after brewing, the moromi can easily separate into different layers, with significant differences between the top, middle, and bottom. It is necessary for humans to stir and homogenize the mash before separation becomes too extreme. Additionally, dirt on the sides of the barrels, the brewery floor, or walls can produce undesirable strong odors, which can transfer to the moromi. Therefore, barrels and the brewery must always be kept clean.
Regarding stirring in Shokin Soy Sauce, approximately 20 times from April to July, the moromi continuously changes—separating, becoming more uniform, or drying on the surface. Unlike large outdoor tanks that maintain a constant state, wooden barrel fermentation involves complex, ongoing changes, which I believe lead to a soy sauce with a deep and complex flavor.
Thus, emphasizing diversity, we carefully manage the timing and method of stirring, how to achieve uniformity, and how to handle separation afterward, all with a clear image of the target flavor in mind.
