The taste and texture of Hōten are greatly influenced by the skill of the craftsman. From a production efficiency standpoint, increasing the amount of starch syrup allows for mass production, but this results in hard Hōten. On the other hand, reducing the amount makes it fall apart, so adjustment is very difficult. We are also particular about the temperature at which the candy is cooked. At Maruei Confectionery, we place two pots side-by-side – one for the candy coating the karinto dough and one for the karinto dough itself – and adjust them to the very limit. It is only through such craftsman's dedication that delicious, crispy Hōten can be made.
■The Strength of Specializing in Hōten Production
We have continued to specialize in the manufacturing of Hōten. Therefore, we can produce a wide variety of Hōten flavors in small batches according to customer requests.We have used seasonal ingredients like cherry blossoms and plums, regional specialties such as gyokuro tea and black soybeans, and even unusual ingredients like acorns and bamboo charcoal. Hōten originated in Osaka and Himeji, so it is not widely manufactured in Eastern Japan. Furthermore, in recent years, the number of manufacturers producing Hōten has been declining even in Western Japan, with only a handful of companies specializing in Hōten.
