This exquisite product is brewed solely through the action of organic cultivated rice, Fuji mountain spring water, koji mold, yeast, and acetic acid bacteria.
By brewing in vats and allowing for static fermentation and long-term aging, a mellow taste and rich aroma are developed.
The deliciousness of the supernatant, born from long-term aging, is sealed directly into the bottle.
By not using any filtering agents or machines, the original taste and rich aroma of pure rice vinegar are preserved.
Four times the amount of rice required by the "Rice Vinegar" labeling standard (JAS standard) is used per liter of rice vinegar, allowing you to enjoy a rich and robust flavor.
The JAS standard allows for the labeling of "Rice Vinegar" if 40g of rice is used per liter of rice vinegar.
However, to make vinegar solely from rice, a minimum of 120g of rice is required, and brewing alcohol or other grains are used to supplement this.
A study published in November 2019 found that common vinegars, which are filtered before shipping, contain almost no acetic acid bacteria.
