◆ Uses Akaho Tenchi Salt
The salt used is Akaho Tenchi Salt, made from Australian seawater concentrated naturally in salt fields, using a traditional method called "Tennenshio" (sun-dried salt) combined with nigari (bittern). This method, passed down in Akaho for over 350 years, involves restoring the bitterness (nigari) to produce salt that enhances the natural flavors of the ingredients and deepens the taste.
◆ Ayawari Weaving Method
The dough is mixed evenly from wheat flour and saltwater, then shaped into strips, which are layered diagonally and stretched using a technique that involves crossing the layers. By applying strong pressure after crossing the layers diagonally, this method expresses a traditional foot-pounding technique, resulting in a texture similar to hand-made noodles.
The layered dough is matured in five stages, developing elasticity, chewiness, and a stronger firmness. This Ayawari weaving process, combined with aging, is used to produce the noodles with a rolling cutter.
◆ How to Serve
**Zaru Udon / Bukkake Udon (Boiling time: 13 minutes)**
1. Bring plenty of water to a boil in a large pot, add the noodles, and loosen them with chopsticks.
2. Boil for about 13 minutes, then remove 2-3 strands to check the firmness and adjust the cooking time to your preference.
3. Once cooked, turn off the heat, transfer the noodles to a colander, and rinse with running water.
4. Serve with your preferred dipping sauce and condiments.
*Note:* For serving methods other than Zaru or Bukkake Udon, adjust the boiling time accordingly to your desired firmness.
**Kamaage Udon (Boiling time: 8 minutes)**
Transfer the cooked noodles directly into a bowl with the hot cooking water (no rinsing needed), and serve with warm dipping sauce. The natural slipperiness of the noodles offers a delicious, authentic flavor.
**Kake Udon (Boiling time: 11 minutes)**
After boiling, rinse the noodles thoroughly with water, then quickly warm them in hot water, transfer to a bowl, pour hot broth over, add your preferred toppings, and enjoy.
