To produce vinegar from rice, first, "sake" must be brewed. This "sake" is made by a traditional Japanese method called "Sandan shikomi" (three-stage brewing), which is done manually.
When this "sake" undergoes a second fermentation, it becomes vinegar. Because the fermentation from "sake" to vinegar is performed using an ancient method called static fermentation, it takes approximately three months for 5,000 liters of sake to turn into vinegar. As a result, it is not suitable for mass production, but it yields a refined product with a gentle acidity.
This pure rice vinegar enhances the ingredients and envelops them with a gentle acidity. It can be used not only in Japanese cuisine but also in various other dishes.
