Shino Foods' "Sake-to" (Shutou) is made from the stomach and intestines of a single skipjack tuna (Katsuwonus pelamis), weighing approximately 4 to 5 kg, from which only about 30 to 40 grams are obtained. These parts are long-term salt-cured and fermented.
Carefully selected from fresh local catch.
Rich in natural umami components and amino acids, it is excellent not only as a snack with alcohol or served hot over rice, but also as a "Japanese-style anchovy" substitute, enhancing a variety of dishes with delicious flavor.
【What is "Shutou" (Sake-to)?】It is a salt-pickled product made by long-term salt-curing and aging of rare parts of skipjack tuna or tuna, and has been supported by sake enthusiasts for a long time.
Today, leveraging the deep flavor developed through long-term fermentation unique to fermented foods, it plays an active role in cooking as a "Japanese-style anchovy" ingredient, from main dishes to hidden seasonings.
Simply placing it on cream cheese makes an easy snack, pairing it with pizza creates a superb combination, and adding it to olive oil or butter yields an exquisite sauce—elevating everyday dishes to the next level.
For a delicious smile, "Create a dining table with Shutou."
※Note: The term "Japanese-style anchovy" does not refer to raw materials or manufacturing methods, but is an expression based on usage ideas.
◆Top Share Nationwide
President Shigeo Shiino III recognized the deliciousness of "Shutou" early on, starting development immediately after World War II in 1949. He succeeded in developing and producing "Katsuo Shutou" from the raw material of salted skipjack tuna, which had been produced previously. Unlike other seafood processed products, its high preservation at room temperature for one year led to widespread acceptance across Japan.
In 1958 (Showa 33), as Katsuo Shutou's popularity stabilized, the company began developing a new product, "Maguro Shutou" (tuna Shutou). Our company was the first to succeed in mass production, and as the original Tuna Shutou, it gained popularity for its smooth taste. Currently, it ranks alongside Katsuo Shutou and holds the top share nationwide.
◆History of Shutou
Japan has a long-standing culture of foods made from fish and shellfish innards. One such product, "Shutou," is a fermented food made from rare parts of skipjack tuna or tuna, with records dating back about 300 years. It is said to be named because it makes your sake "run away" and your chopsticks "race"—a metaphor for its addictive flavor.
※It is also sometimes made from other fish such as salmon, sea bream, and saury.
◆Shutou Day
April 10th is "Shutou Day."
"Shutou," a traditional flavor long loved in Japan, is commemorated by our company as "Shutou Day" (certified by the Japan Anniversary Association).
The date is based on the pun "4 (shi) 10 (to)," sounding like "Shu-to."
◆Shutou is Rich in Ornithine
Katsuo Shutou contains a high amount of ornithine, which is said to enhance liver function. It contains about seven times more ornithine than shijimi (freshwater clam).
※While 100g of shijimi contains 10.7 to 15.3 mg of ornithine, our product "Katsuo Shutou" contains approximately 89.7 mg per 100g. (According to Shino Foods)
