◆Yamasei's Mustard
Around the early Showa period (mid-1950s), leveraging our experience in chili pepper manufacturing and processing, we began producing and selling mustard powder.

◆Commitment to Raw Materials
We carefully select and use high-quality mustard seeds from Canada. Our particular focus is on using Oriental-type mustard seeds, which have the strongest spiciness. We also offer products made with seeds grown without chemical fertilizers, certified by QAI, a US organic certification body.
The reason Yamasei is committed to spiciness is that we believe spicy mustard is the most delicious. It requires expertise to retain spiciness during the oil extraction process from mustard seeds, and it is slightly more expensive, but we insisted on spiciness because we want to create the most delicious mustard.
For example, the famous local specialty of Kumamoto, Karashi Renkon (mustard lotus root), is made by many of its renowned shops using Yamasei's mustard for a long time.
◆Commitment to Manufacturing Process
Mustard powder is made by grinding mustard seeds after the oil has been extracted. In the past, when manufacturing methods were not as efficient, mustard seeds were heated, placed in a bag, and squeezed tightly to extract the oil.
Mustard seeds contain over 40% oil. After using a continuous oil press to extract oil until the residual oil content is about 15%, some products are ground while removing the skins. Removing the skins is an extra step to achieve a fine powder. Furthermore, by pounding the seeds with a mortar and pestle (kine) all at once during grinding, we create a fluffy mustard powder.
And for Yamasei's mustard powder, spiciness is paramount.
Heat is inevitably generated during the oil extraction process, but if the temperature rises, the enzymes in the seeds become inactive, and the spiciness is lost. Yamasei's commitment lies in temperature control and adjustment to maintain the ideal, delicious spiciness.
